Launching a Second Froyo Shop as Liberty Hill Tripled in Size

14241 West SH 29 Ste 303
Liberty Hill, Texas
Rebecca Darling took over The Yogurt Experience in Round Rock in 2018 and made a smart local bet by opening a second location in Liberty Hill as the city exploded from about 4,000 residents in 2020 to roughly 12,000 to 15,000 today. The move put a family friendly dessert brand directly in the path of fast housing growth along Highway 29.
The business proved resilient early. Darling entered the food world with no prior experience, then faced chemo in 2019 and a 12 week COVID shutdown in 2020 while still paying full rent. Since 2021, the business has posted year over year sales and profit growth, supported by two locations, streamlined staffing, and a clear focus on repeat local traffic.
Business Selling Point: The Yogurt Experience rotates 10 flavors with 50 toppings and drives volume through simple promotions like $5 Mondays on 12 ounce cups. Community Spirit Nights donate 20 percent of sales back to schools and groups, reinforcing loyalty in a high growth area.
Expansion Strategy: The Liberty Hill shop opened in May 2024 under the water tower on West SH 29, targeting households earning around $111,000 and a population projected to exceed 20,000. Extended Friday and Saturday hours capture peak family traffic as the city continues to scale.K households, eyeing 20K+ residents, with Friday and Saturday store peak.

Why Costco and Target Expanding in Liberty Hill Matters

New Costco Wholesale store in Liberty Hill, Texas
Costco and Target are both committing major investments to Liberty Hill, and that signals more than new shopping options for residents.
Costco is investing $62.6 million in a new warehouse, while Target is adding a $22 million store on a 100+ acre site. These decisions reflect long-term confidence in the area’s growth.
Here’s what Liberty Hill’s trajectory shows:
Population increased from 3,794 in 2020 to about 14,850 in 2025
That’s a 291% jump in just five years
Growth is averaging roughly 17.5% annually
Where the story gets interesting:
Many fast-growing suburbs cool off once early retail demand is satisfied. Liberty Hill has continued to exceed expectations, with residential growth and consumer demand staying strong.
For national retailers, that kind of consistency matters. For locals, it reinforces that Liberty Hill’s momentum is real and still building.

How Lioness Books Is Redefining the Local Bookstore

208 N Gabriel, Leander
Mobile bookstore twist: "Lioness Books is a mobile used bookseller operating in the greater Austin, Texas area. We partner with local businesses by operating out of a twenty-foot trailer that allows us to bring a selection of used books and gifts to the community."
Big 2026 move: "In 2026, we are excited to announce the opening of a brick-and-mortar store in Old Town Leander. We launched our mobile store in 2024 and are now expanding in 2026."
Unfair advantage explained: "An advantage of our mobility is that we create otherwise overlooked accessibility and access for a variety of people. Popping up outside a local coffee shop, brewery, or a neighborhood pool brings in curious onlookers and expands our customer base beyond traditional bookstore buyers."
Community-first mission: "Part of our mission as a bookstore is to give back to the community as much as possible - this was the birth of our free book program, our intentional partnerships with non-profits, and our Little Free Library donations. Our philanthropy is just as important to us as our book sales and fosters our ability to bring books to the people, create a safe community third space, and encourage conversations around literacy."
Trailer build grind: "I put myself on a tight timeline to complete the trailer build-out for the mobile store. It was challenging completing the project in time for the grand opening date I had set for myself, but with the help of my wonderful community of family and friends, I was able to complete the store and open on-time."
Retail reality check: "While this is important, you must understand that ultimately, this is a retail job with a sales focus. Take the time to learn your numbers and know them like the back of your hand."
Next 90 days focus: "As we prepare to open our new location in Leander in early 2026, we will be expanding our team and working with the city to meet code requirements for the historical section of Old Town. We look forward to creating this third space for our community and finding new ways to partner with other small businesses."
Daily discipline habit: "Wake up early and do the tasks you are dreading the most first thing."
